The technological innovation in food industry

The high pressure processing (HPP) is an innovative, but proven and safe technology that is up-and-coming in the food and beverage industry. In essence, it represents a cold pasteurization technique which preserves the treated food products. During the process foods and beverages which are preliminary wrapped in a flexible and waterproof package undergo high hydrostatic pressure up to 6000 bar. Depending on the product type and its water activity the treatment lasts from a few seconds to a few minutes. Through the power of pressure all pathogens (Listeria, Salmonella, E. coli) are eliminated. The result is a food product that is safe, with preserved quality, extended life cycle and many more benefits.
